The King´s cake

Word has it that the King´s cake is a heritage from the pagan rituals that took place during the winter solstice. Later, this tradition was recovered by the French catholics, in homage to the Three Wise Men. At a later date, the Sun King, Louis XIV, would put his chief baker in charge of creating a huge crown shaped cake with many precious stones inside it, and also adding a fava bean for those who didn´t win any jewel. When the French Revolution broke out, the sale of  ‘The King´s cake’ was forbidden. It is then baptized ‘Sans-culottes’. By the end of the XIX century, Baltazar Junior,born in Lisbon, brings the recipe from Paris and puts it into practice at the famous Confeitaria Nacional. This pastry shop, located on the corner of Betesga street with Praça da Figueira square continues to maintain the tradition alive, still making excellent cakes to this day.
